The name "Hyssop" derives from the biblical Hebrew name: Ezov, and it appears in legends of many traditions. Add Syrian Hyssop to olive oil and use as a tasty salad dressing or use as a substitute for oregano. The spice has a wonderful aroma; it grows in crevices between rocks all over the Holy Land, is very popular in medical folklore and is used as a spice in many Mediterranean dishes. “Purge me with Hyssop and I shall be pure, wash me and I shall be whiter than snow" Psalms 51.7.
